It sounds odd but it's surprisingly delicious! The Skittle cupcake came to life on cold and dreary day that needed a little a rainbow.
The Skittle Cupcake
2 cups white sugar
1 cup butter
4 eggs
1 tablespoon and 1 teaspoon vanilla extract
3 cups all-purpose flour
1 tablespoon and 1/2 teaspoon baking powder
1 cup milk
5 packets of kool aid cherry orange lemon aid lime grape
After you mix the together the ingredients above minus the koolaid packets, divide the batter into 5 individual bowls. Then mix the koolaid packets into each one. Evenly scoop a layer of the batter into cupcake liners then place in the oven at 350 for 22 minutes.
After the cupcakes cool, ice the cupcakes with a simple white icing.
White Icing Recipe
4 cups confectioners' sugar
1 cup shortening
2 tablespoons water
1 teaspoon clear imitation vanilla extract
In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
So for Easter, I decided to make my coworkers some carrot cake cupcakes in honor of the Easter Bunny lol. It's a really easy recipe but it tasted so good when put together with the cream cheese icing.
Carrot Cake Cup Cakes 2 cups of sugar 3 cups of all purpose flour 2 teaspoons of baking powder 2 teaspoons of baking soda 2 teaspoons of cinnamon 1 teaspoon of salt 1 1/2 cups of vegetable oil 4 eggs 1/2 cup of chopped nuts 3 cups of grated raw carrots
Mix all the ingredients thoroughly. Evenly divide the batter into a cupcake pan and bake for about 20 minutes at 350.
After the cupcakes cool, mix together this easy icing and put it on top. It just completes the flavor!
Cream Cheese Icing Mix together the following 8 ounces of cream cheese 3 cups of powdered sugar 2 teaspoons of vanilla extract 1/2 stick of softened butter
